CELLAR NOTES

Our cellar notes keep you up to date with how back vintages of Tallis Wines are drinking now. On a regular basis we pull wines from the cellar to monitor their aging and now we pass this information on to you. Find out how the Tallis Wines in your cellar are drinking right now.

Tallis Dookie Hills Shiraz 2001

Crimson red in colour with plenty of primary fruit characters still evident on the nose. The palate opens with dark berries and plums layered with cigar box and vanillin oak. Drink now or over the next couple of years.

Tallis Dookie Hills Shiraz 2002

Intensely purple in the glass, this wine has retained much of its youthfulness. Blackberries, spice and mocha oak aromas lead into a juicy palate of ripe fruits, liquorice and smooth mouthfeel. The palate is powerful which suggests this wine is not only drinking beautifully now but will continue to do so for many years yet.

Tallis Dookie Hills Cabernet Sauvignon 2001

Showing brick red hues, the nose has varietal minty, cassis aromas with hints of cedar oak. Plums on the palate are integrated with bottle aged tobacco and leather characters. If you have this wine in your cellar, drink now to enjoy the primary fruit characters this wine continues to display.

Tallis Dookie Hills Cabernet Sauvignon 2002

Dark crimson in colour, with intense blackcurrants and plums on the nose. The persistent palate has concentrated berry fruits in perfect harmony with chocolate and earthy characters. The tannins are ripe and silky. Drinking well now and will continue to do so over the next couple of years.
