Walk. Savour. Sip

Spring is a great time to walk the Tallis track before the heat of summer sets in.  Follow the red flags up the walking track next to Tallis Wine and experience panoramic views of the Strathbogie Ranges and the Dookie District. The Dookie landscape is changing every day. Paddocks are changing from green and gold to the colours of an Australian summer, a patchwork of activity and texture.

It is a beautiful time of year for walking. Lots of kangaroos are out and about and you could even spot an eagle, goanna or if you are very lucky an echidna! So put on your walking shoes, rally your family and friends and follow the red flags up the walking track right next to the Tallis Wine cellar door.

Its only a 1 hour return trip with the added bonus of a chance to relax, sip a glass of wine, savour a regional tasting platter or enjoy delicious homemade slice and coffee!

Walking track is open every Friday, Saturday & Sunday from 11.00am to 5pm.

Alfresco at Tallis

At last our magnificent verandah views can be comfortably viewed in all seasons – rain, hail, wind or shine.

Our effective new verandah blinds have doubled our space so we are equipped (no matter what the weather) to host functions for up to 60 guests (sit down) or 100 standing. When the weather is fine they disappear and you find yourself sitting in the great outdoors - alfresco.

To further enhance the Cellar Door we have added a new preparation area so Susan’s team no longer have to work in an area where you couldn’t swing a cat! A great job team Tallis, producing fantastic platters since we opened under such challenging circumstances.

Warming winters at Tallis

The cold weather is upon us. The vines have shed their autumn foliage and are are bedding down for the next few months to withstand the winter chill.

Up at the cellar door its a different story, the fires are burning, it's warm and cosy and mulled wine is now on offer! The newly planted crops are pushing their green heads through the Dookie dirt and the landscape is changing to a lush green. Every week the country side looks different and on a clear day you can even see the snow capped peaks of Mt Buller. It is a wonderful sight to watch a storm roll in over the hills through the windows of the cellar door or even better on a still winter's day to sit on our verandah wrapped in a blanket in front of the fire enjoying a regional platter and a glass of red.

We are open every Friday, Saturday & Sunday 11am to 5pm and remember the cellar door is also available for private bookings any night of the week all through winter. What's not to love about wine education and wine tasting at a business event or social gathering? What's happening in the vineyard

Harvesting grapes for all varietals is now complete. Yields have been moderate but the quality is excellent and the reds going into barrel are showing great promise. The vines have been watered and will be pruned in June and will be tucked in for winter.  

Richard, our winemaker is finalising the Shiraz blends for 2014 and bedding down the 2015 wine for a relaxing 12 months of maturing.

We did a late harvest Riesling which is simpler than the Botrytis and makes a light sweet wine to accompany dessert. The second vintage of a trial plot of a grape variety which is new to Australia has been picked and has members of a wine collaboration rather excited. What lucky vines to come down under land in the ancient rich red Dookie dirt!



2015 has started with a bang

This year will be our 15th vintage and since opening the cellar door just three years ago, more and more people are discovering our wine and the secret of the dirt.

2015 has started with a bang. We wrapped a lot of wine enjoyment and art-focussed happenings into the SheppARTon festival during March at the cellar door and locations across Greater Shepparton. Our involvement included the Tasmanian connection art exhibition, artisanal gin tasting, an Asian inspired lunch and the festival club - all staged the cellar door. Our wine was served at the longest lunch and made a cameo at opera in the orchard. As part of the festival, Richard ploughed a geoglyph into the cellar door paddock, this year in the shape of a huge serpent. Cellar door visitors have enjoyed walking along the geoglyph and viewing it with a glass of wine in hand from the new vergola-covered deck. After burning the geoglyph paddock, in preparation for harrowing and sowing, Richard confessed he’s now “into charcoal”, along with dirt and wine of course! The cellar door is really rocking and our effervescent cellar door manager Susan is already taking bookings for Christmas.

At 4.00am this morning, in the cool of pre-dawn, vintage began with Viognier, Riesling and Shiraz perfect for picking (2 weeks early).

Photos below show:
1. Grapes are delivered from the vineyard to our winery.
2. Fork lift tips the contents of bin into crusher / de-stemer which separates the stems and leaf matter and crushes the grapes for our Silent Showman Shiraz Viognier.
3. The crushed grapes are pumped to the fermenting vat in the winery where yeast will be added.
4. Richard & George look satisfied with first day of vintage. (Not sure why they are smiling as they still have a couple of hours of clean up before they can call it a day!!)
