Already rated 93/100 by wine critic James Halliday our 2010 Silent Showman Shiraz has just been awarded 5 stars by  Winestate Magazine  and “Top in Class” at the annual Central & Western Victoria tasting. As our volumes are extremely limited this wine is only available online and in our Cellar Door. Similar in style to the 2008 which sold out in record time this wine is dense purple with fragrant mocha, blackberry and licorice aromas and dark berry fruits, chocolate and spice through the palate. A parcel of this wine was barrel fermented in new American and French oak barriques to creating incredible complexity with plump ripe tannins providing a soft rounded structure. Early bottling has captured these characters, and bottling under screw cap means this wine will retain its freshness for many years to come.

A wine as big and rich as this demands red meat. Marinate and serve it chargrilled with a red -wine sauce and you’re onto a winner .”

Botrytis concentrated grape flavours and sugars have resulted in intense aromas of candied cumquat and citrus marmalade. The rich sticky palate carries poached quince, honey and a hint of spice alongside luscious texture balanced by soft acidity. Screw cap. Sweet wines like this are beautiful with desserts like crème brulee, apple tart tatin or pear & almond upside down cake. Also good with cheeses and pate.

Our second Dookie Hills Riesling is fragrant and restrained with plenty of lime blossom, green apple and musk aromas. The palate is crisp and dry showing tangy grapefruit and lime pith sitting alongside bright crunchy acidity and a long zesty finish. Screw cap. The cleansing effect of Riesling’s acidity make it perfect alongside spice and chilli so team this with fresh Vietnamese rice paper rolls, a Thai beef salad or a knock your socks off Vindaloo.

SOLD OUT Displaying vibrant garnet hues characteristic of this Italian varietal, the wine is highly perfumed with redcurrant and cherry fruits mingling with anise and cloves. The palate brims with bright cherries, spice and licorice wound into a tight structure of crunchy acidity and soft velvety tannins. Medium bodied in style with a long, clean finish.

Needless to say Italian fare is the way to go with pastas and risottos, pizza, mushrooms, root vegetables and the savoury tannins will accompany most game and red meats.

NEW RELEASE Our Sparkling Viognier is produced in the traditional method where the wine is matured on yeast lees in bottle creating incredible complexity, and yeasty biscuity characters derived from the secondary fermentation. In its youth this wine displays refreshing citrus, stone fruit and honeysuckle characters which take on a creamy richness as the wine develops. A creamy, persistent mousse and fine bead provide a delicate mouth feel with a refreshing acid zing. Serve chilled. Crown seal. Lovely as an aperitif or with your favourite canapés, tuna sashimi or garlic prawns or fish. Tip: drop a fresh strawberry in your glass for a decadent treat at the finish.

WE THOUGHT WE HAD RUN OUT … BUT LOOK WHAT THE BUNNY FOUND OVER EASTER!  Straw in colour with green tinges. An elegant wine with aromas of white peach and green pear. Densely purple in the glass with sweet berry fruit galore. Licorice, cloves and blackberries mingle with coffee grind notes in this shiraz so expressive of its terroir. The palate follows the same aromatic cues built on bright juicy blackberry fruit, dark chocolate and your Grandma’s best fruitcake. Fine crunchy tannins give fullness to the structure and the wine finishes with oodles of length. Screw cap. A great complement to a beef and Guinness pot pie, spag bol, lasagne,or duck in plum sauce.

IT'S BACK. Deep cherry red in colour. Unmistakably sangiovese, with a characteristic bouquet of spicy fruit, dried herbs and black olives. Similar in style to Italian Chianti the palate is a fine balance of morello cherry fruit and earthy, savoury notes. The firm tannin backbone and generous lick of acidity adds length and structure. The wine to match with a duck liver pate or any Italian dish such as tagliatelle ragu, porcini mushroom risotto, spicy chorizo sausage or Sicilian pizza.

In his honour, our flagship range, the Silent Showman are wines produced from the best grapes in the vineyard and only in the best vintages. This limited release magnum is produced from the best shiraz grapes in the Tallis Wine vineyard. Inky purple in the glass, the nose opens with concentrated blackberry and licorice aromas and the elegant palate shows depth of flavour and complexity. This wine displays excellent cellaring potential due to the abundance of flavour and the ripe, smooth tannins. Cellar for many years or enjoy now with (lots of) friends.
