ALL WELCOME Local artists Liz Evans and Andrew Sands (Sandsy) have created an outstanding exhibition of their work reflecting the micro and macro magnificence of Dookie.

Liz and Sandsy hope that this exhibition conveys the excitement and admiration they have for their surroundings.

From the ‘WOW check this out’ effect when noticing for the first time the beauty of microscopic hairs on a seed stem of Austrostipa elegantissima to the imposing defiance of the silos a Youanmite.

Liz’s work displays her dexterity with tweezers and vegetation, while Sandsy has been known to employ the use of a pressure washer now and then.

THE DEFINING FESTIVAL THEME PERFORMANCE@ TALLIS SUNDAY 9TH MARCH 2014 The culmination of choir and sculpture workshops starring indigenous soprano Deborah Cheetham and the voices of the multicultural Dream Voices choir.

The Dream Voices Performance is the Festival Theme defining performacne of the 2014 festival. Set in the magnificent surrounds of Tallis Winery in the rolling Dookie Hills, this is a family event with great entertainment and a chance to become involved in a magnificent performance for the family.

Food is available on site or pack a picnic. Sorry NO BYO (drinks available for purchase on site). Catch the bus or make your own to Dookie and join hundreds of families for this fantastic evening of enlightening live entertainment.

This year children will be sowing a crop of dreams by planting ‘Dream Voice Catchers’ in a plowed image of a . A 100 voice multicultural choir will perform two songs telling a story of the ‘Dream Time’ creation of the Goulburn Valley and celebrating the cohesion of our community.

So come along to the most exciting night of the Festival, grab a wine, learn the Festival theme song, have the kids make a ‘Dream Voices Catcher’ and get involved in the ‘Dream Voices’ spirit.

The DIRT Winter 2013


We are always on the lookout for ideas to reward our Tallisman members and we’ve thought of a little something new we think you’ll like. Next time you visit the Cellar Door fill out the visitors slip on the front counter or throw your business card into our Tallisman competition box and every second month we will be giving away a Magnum of our 2006 Silent Showman Shiraz.


Our 2013 Rose, Viogner and Riesling are awaiting bottling and will be released in Spring. Our 2013 Sparkling Viognier has been tiraged (secondary fermentation to get the bubbles happening) so we will have an early release of the first batch of this wine late Spring, just in time for Melbourne Cup.


Throughout winter we will be serving a light lunch option every weekend. Our lunch special includes either a Habbies Angus Beef pie or a homemade vegetarian tart served with salad and a glass of your fave Dookie Hills wine. Softies available for the kids or designated driver. Platters available all day. In the depths of winter our thoughts turn to comfort food to warm not only our bodies but to nurture our souls. Visit our blog to find the best chocolate pudding recipe in town. Make a double batch and serve this pudding with the 2012 Dookie Hills Botrytis Riesling for an intense flavour experience.


As our vines have moved into the dormancy stage of their lifecycle our team of pruners have swept though the vineyard whipping it into shape. Aside from making the vineyard look pretty the main reason we prune is to control the grape yield for the following vintage. We are all about quality over quantity at Tallis so are vines are pruned to grow just enough grapes to produce the finest drop.

For ‘emergency’ purchases locals can visit Phillips Cellars and IGA in Shepparton or Cellarbrations in Benalla. If you are eating out you’re in luck as most of the best eating spots serve Tallis wine however if you can’t drink Tallis at your favourite restaurant or café let them or us know and we will get our wine in there pronto.


The same wine will smell and taste very different depending on its serving temperature. Sparkling wines are best served very cold, around 6 to 8C. This also helps control the mousse while serving. Light table whites benefit from a cool serving temperature around 9C. Serving these wines cooler than this may inhibit the delicate fruit characters in the wine. Fuller bodied whites such as chardonnay and viognier can be served slightly warmer at around 11C as this allows the textural component of the wine to be appreciated.

If the wine is cellared properly, a red will likely be close to ideal serving temperature straight from the cellar. Light to medium bodied reds such as pinot noir and sangiovese should be served between 14 to 16C while full-bodied reds like shiraz and cab sauvignon can be served at the upper end of the temperature scale at 16 to 18C. If your cellaring conditions lead to your reds being stored at higher than these temperatures, then a short burst in the fridge or ice bucket will bring them back down to a more enjoyable temperature.

Weekend lunches at the Cellar Door

Since introducing the delicious Angus beef Habbie's pie and salad lunches at the Cellar Door we've been booked out most weekends. Served alongside a glass of Dookie Hills Shiraz or our new release Nebbiolo it's a winning match with the rich flavours perfect for a hearty warming winter lunch. A vegetarian tart option is also available.

Showing some love to our 2013 Shiraz ferment

We hand-pick the Shiraz for our Silent Showman wines in small parcels of fruit from targeted blocks in the vineyard and at various degrees of ripeness to achieve the desired qualities in our wines. After gently crushing the grapes we transfer them into open vats, add some yeast and a few other goodies to let the fun begin.

The skins from the fermentation rise to the top of the vat above the fermenting juice so several times a day we manually push the cap of skins back into the juice. This can be done a variety of different ways however at Tallis we like to show our grapes and ferments some love by getting down and dirty in the ferment.  Click on the link below to see the two Tanya"s up to their elbows in red must as we nurture our ferments into producing a sensational wine.





'Silo Series 1' Photo Exhibition by Serana Hunt @ the Tallis Cellar Door

For the month of March Tallis Wine Cellar Door is delighted to host a photographic exhibition by Serana Hunt as a part of the sheppARTon festival program. Serana lives in Dookie and works as a commercial and practicing contemporary photographer.

The exhibition, titled ‘Silo series 1’ is a collection of photographs taken at the silos in the heart of Dookie, extending on her love of photographing the everyday world around her and transforming it into another realm through the medium of photography. Her first solo exhibition, held at SAM in 2009, ‘Portraits of country racing’ was a series of photographs taken while working as course photographer at country racetracks. Since then she has held two solo exhibitions in Sydney’s Head On photo festival (2011,2012), Federation Square, Melbourne (2012) and the 2010 sheppARTon festival. In this time her work has been shortlisted for both national and international photographic competitions.

Art Ploughed Into The Earth

Long neck turtles are the totem/symbol of artist, Ross A. Morgan’s clan group/tribe, Yorta Yorta. This animal is protected and can’t be eaten by tribe members. The turtles in the painting represent Ross’ ancestors now in the dreamtime.

The 2013 SheppARTon Festival theme ‘Emerging Voices’ pays tribute to the traditional custodians of the Goulburn Valley and tells the story of ‘Bayaderra’, the Long Neck Turtle, a creature of perseverance and the totem of the Yorta Yorta Aboriginal Nation. The turtle also represents a welcoming spirit to those who have travelled hard journeys to emerge from their burden with a free voice.

Richard ploughed this magnificent Long Neck Turtle into the earth below the Tallis Wine Cellar Door in preparation for the multicultural Emerging Voices Community Performance event by the SheppARTon Festival from 5.30pm Saturday 9th March 2013.
