What you need to know about Red Wine

Red Wine

Red Wine has become part of Australia's life blood. Popular red's include Cabernet Sauvigonon (cab sav), Pinot Noir, Shiraz, Merlot and a variety of blends including cabernet merlot.

Red wine grapes grown in warmer parts of Australia generally produce more rich and full flavoured styles. In cooler climates, the style of tends towards lighter and more delicate flavours.

Cabernet Sauvignon (cab-urn-ay so-vin-yon)

Cabernet Sauvignon, or Cab Sav, it grown best in medium to cooler climates. The flavours of Cab Sav are bold and often blackcurranty. Cabernet can also blend with Merlot, to create cabernet merlot.

Many Victoria Wine regions are well known for their Cabernet Sauvignon's, aswell as many regions in South Australia.

Merlot (mur-low)

Merlot does not often come alone. Merlot is often blended with Cabernet, as mentioned above, to create Cabernet Merlot. The adds a suppleness to the Cab Sav's more definate and serious structure. On its own, Merlot will be full of primary fruit flavours, and is much softer than Cabernet Sauvignon.

Sangiovese (San-Ja-Vey)

Sangiovese is a variety of Italian red wine, marked by its sour cherry taste. Tallis Wine are one of only a handful of Australia's wineries to have truely mastered Sangiovese.

Pink or Rose Wines (ros-ay)

Rose is a much lighter variety of wine than red wine, and even lighter than some whites wines. Rose is made with both the grape juice and the skin. The skin is only in contact with the juice for a short period of time, much shorter than other varieties of red wine. Rose is best served chilled on a hot summers day. Shiraz (she-rars)

There is no doubt that Shiraz is the darling of the Australian red wine industry. Shiraz, is very Australian, with such tones as mulberry, spicy, and many other regional tones.
