Once a month, the team at Tallis Wine gather for a wine tasting to benchmark our wines.
A Matter of Taste
The idea behind the tastings is to compare our wines with others in the marketplace. One month we will look at viognier, another month sangiovese, as so on.
We taste the wines blind, write up notes and compare. While the tastings have proven to be a lot of fun, we all agree that our wine knowledge has significantly improved.

Why not give it a go!
Why not get your own wine tasting group together.
Simply choose the wine style you would like to look at, buy up to six bottles of wine in that style (don’t forget to include a Tallis wine) and bag them into plain paper bags to disguise their identity.
Number the bags one to six and record your perceptions of colour, aroma and palate on the tasting sheet.
When the tasting is complete, unmask the wines to reveal their identity.

Dookie Hills Sparkling Viognier 2014
A flirty celebratory sparkling displaying fresh tropical fruits and honeysuckle characters in its youth which become silky and rich as the wine develops. A creamy, persistent mousse and fine bead provide a delicately rich mouth feel with a refreshingly zingy finish. Serve chilled and enjoy as an aperitif or with canapés.
Dookie Hills Riesling 2014
A great example of a naturally aromatic Riesling with a bouquet of blossom, dried pear and a hint of musk. The palate offers refined lemon sherbet acidity and generous length. This drop is both refreshing and flavoursome and works well with oysters and Asian seafood dishes.
Dookie Hills Riesling 2013
With fragrance and restraint, the palate is crisp showing tangy lime pith sitting alongside crunchy acidity and a refreshing finish with plenty of lime blossom, green apple and musk aromas. Suits Asian dishes, especially with lemongrass, ginger and chilli and will lift any salad or seafood dish.
Dookie Hills Viognier 2014
This Viognier bursts with a bouquet of vibrant tropical fruit with hints of musk and ginger lingering in the background creating a heady exotic mix. The palate brings orange blossom, glace orange, white peach and apricot with a soft, rounded textural mouth feel. The flavours are generous and persistent carried by well-balanced acidity. A fabulous accompaniment to most cuisine especially fowl and pork and citrus inspired dishes.
Dookie Hills Viognier 2006
This Viognier is showing aged characters of fragrant honey and toast alongside rich tropical fruits. It is fuller and richer than the 2013 and suits more complex meat dishes such as quail wrapped in proscuitto or Asian inspired pork belly.
Dookie Hills Rose 2014
Its pretty strawberry hue previews a confectionery nose of strawberries and cream and rose water. A surprising palate that is luxuriously round and soft with a touch of sweetness, leading to a crisp finish. Berry and musk flavours shine with clarity making this wine the perfect accompaniment to antipasto, roasted beetroot and feta salad and spicy BBQ seafood.
Dookie Hills Botrytis Riesling 2012
A delicious dessert wine, Botrytis concentrated grape flavours and sugars have resulted in intense aromas of candied cumquat and citrus marmalade. The rich sticky palate carries poached quince, honey and a hint of spice alongside luscious texture balanced by soft acidity. Sweet wines like this call for a rich pudding or crème brulee or apple tarte tartin. The sweetness of this wine is an excellent foil to any salty, blue or strong cheeses.
Dookie Hills Sangiovese 2013
This much anticipated release has lived up to expectations. Delighting the eye with earthy brick red tones and rhubarb hues at the margins. The nose gives spice and dusty aromas with a hint of perfume that lead into similar flavours on the palate where they are joined by tobacco and black olive. The mouth feel is soft yet with typical grippy Sangiovese tannins on the finish. This texture is begging for a ciabatta, charcuterie, roasted vegetables, rabbit ragu or strong cheese.
Dookie Hills Merlot 2010
Mild crimson in colour with great clarity, the nose offers notes of plum and earthiness. The palate brims with juicy blackcurrant and finishes with savoury oak nuances that give balance and structure. This vintage is very approachable displaying dry soft tannins. You might like to pair this Merlot with roast pork and seasonal root vegetables, duck sausages or a washed rind cheese.
Dookie Hills Cabernet Sauvignon 2013
A vibrant plum-coloured Cabernet with gorgeous aromas of violet and cedar. The palate releases delightful plum and chocolate flavours and is generous and mouth filling with a good finish. Try matching this wine with slow roasted lamb shoulder with parsnips and beetroot, duck with a dark fruit sauce or lash out and match it with a decadent dark chocolate dessert.
Dookie Hills Cabernet Sauvignon 2011
True to variety with mint and cassis fruit aromas alongside lashings of dark berries, earth and choc-mint. Just a touch of oak adds complexity to the ripe, textured palate with fine tannins creating persistent length. Stunning with a lamb roast or slow braised dishes like lamb shanks, a cheesy polenta or mash, or earthy pulses such as lentils.
Dookie Hills Cabernet Sauvignon 2004
Distinguished dark red hues in keeping with the age of this cellar release red. Primary fruit aromas of plums and cassis mingle with the aged characters of cedar and cigar box. Earthy tobacco characters carry through to the palate and are balanced by well integrated tannins and excellent length. The mellowed tannins of this aged Cabernet work well alongside grilled red meat, a rack of lamb or gourmet sausage. Also a terrific accompaniment to aged cheddar and other hard cheeses.
Dookie Hills Shiraz 2013
Purple in colour our new release Shiraz has aromas of spiced plums and elegant vanilla from time on French oak. The palate shows dark berry fruits, a hint of pepper and plenty of spice, well balanced with the typical generosity of flavour that is Dookie Shiraz. Match it with French onion soup, roast beef with a juniper and Shiraz jus or pizza topped with lamb fillet and Persian feta.
Silent Showman Shiraz 2010 93/100 James Halliday – wine critic
Impressively dense and dark in the glass with ripe aromas of blackberry and blood plums layered with overtones of creamy chocolate, mocha and baking spices. Moderate tannins are soft and silky providing structure and excellent aging potential alongside refreshing acidity and a long finish. The fruit for the Silent Showman comes from the best parcels producing big bold Shiraz characters. Limited American oak imparts mocha chocolate characteristics. This robust wine sits comfortably alongside rich flavoursome foods including marinated kangaroo fillets, Osso Buco, chunky beef and black pepper pie and a chorizo based dishes.
Silent Showman Shiraz 2013
The fruit for the Silent Showman is handpicked from our vineyard's best parcels and spends 12 months on American and French oak. This combination of selection and oaking gives elegance and the mocha chocolate flavours to the wine. The dense colour gives a clue to the intensity and complexity of the wine. This Shiraz is very approachable now with fine tannins yet has the power to age for at least 10 years. The nose has red berries, spice and hints of cedar leading to a rich palate of berry plum mocha and toasty oak. A food match for this wine needs to have the depth of flavour to complement the wine so a char grilled steak with caramelised onion, Moroccan flavoured BBQ lamb or aged cheddar would all fit the bill.
Silent Showman Shiraz Viognier 2013
This blend of Shiraz and 3-5% Viognier produces a silky mouth filling and fragrant wine. The grapes are co-fermented allowing well integrated fruit flavours and complexity prior to ageing in French and American oak. The resulting wine has aromas of mocha and lifted fragrance with hints of musk from the Viognier. The flavour profile is luscious with plum, berries, spice, coconut and mocha complemented by silky tannins and persistent length. This textural and fragrant wine works well with rich meats such as duck breast with juniper berries or sticky beef ribs as well as a beetroot risotto with goats cheese.
